Halloumi is a cheese from Cyprus made from cow's, goat's and sheep's milk. Dodoni's grilled cheese is lightly flavoured with mint and can either be grilled or pan-fried. Halloumi is a standard dish in almost all restaurants in Cyprus. A typical Cypriot breakfast consists of halloumi with a fried egg.
Cut the halloumi into finger-thick slices and grill or fry it "au naturel" in hot olive oil without salt and pepper. It is important to do this at a high temperature, otherwise the cheese can become tough and the mint pieces contained in the halloumi cannot fully develop their flavours.
